When Chef Marc Vermetten spontaneously discovers exceptional delicacies and ingredients during his wanderings through the region's city markets, he cannot resist. The specialities are added to the shopping basket, and on the same day a special dish is conjured up in the Hardthaus kitchen, that is not on the menu.
